The Best Lemon Cookies ~ Quick , Easy, and Oh, so good!

True Story: Several years ago, I found an extraordinary recipe for lemon cookies in a cookbook I snatched from my sister’s bookshelf. I made them that Easter, and I have to say, they were AWESOME! I was never even crazy about lemony desserts, up until then. They were that good!

Since then, my sister has somehow misplaced that cookbook and the recipe (which I could smack myself for not copying it).

Today, I needed to bake for the first Easter dinner that Scott and I will host at The House on High Street. Since I was already making Rachel Maria’s Biscotti, I wanted to make a second (yet easier) cookie. I really wanted those lemon cookies, but since I didn’t have much time (and I lost the recipe) I decided to try it using a LEMON CAKE MIX. I am so glad that I did!

Yes, these cookies are from a lemon cake mix in a box, and they are extraordinary.  (Just like the ones I made, from scratch and a forgettable recipe, long ago.)

Scott is not crazy about lemon desserts, and yet he really likes these cookies! He couldn’t even tell the difference from the lemon cookie I made from scratch, in the past. I think this is the way to go, for me, from here on out! How about you?

Lemon Cookies with Glazed Icing 

Ingredients

One box lemon cake mix
2 eggs
1/3 cup oil

Directions

*Preheat Oven to 375ºF
*Mix ingredients & Roll into 1 inch balls

*Flatten a bit, with your palm or the bottom of a flat glass.
*Place on a lightly greased baking sheet about 3 inches apart. (They’ll spread out during baking.)
*Bake for15-20 minutes. (You’ll notice the cracks on the top of the cookies. You can also test using the toothpick trick.)

*During baking, whisk together ingredients for the glazed icing. (See below.)
*Pour or drizzle 1 T. of the glazed icing onto the cookies, once cooled.

(If you don’t want to mess the cookie sheet, you can use a wire rack. But, why mess a wire rack?!)

Glazed Icing

Ingredients

2 cups confectioners sugar
2 T. lemon zest
1/4 cup fresh lemon juice
2 T. cold water

Directions

Whisk together ingredients & pour over cooled cookies (about 5 minutes out of the oven).
