This is a crowd-pleasing recipe that goes well with any chicken part; but thighs and drumsticks work best. It has UNBELIEVABLE flavor. It’s a little crisp on the outside (with or without skin) and oh-so-tender on the inside. There’s a lot of flexibility with this recipe, so feel free to tweak it according to your preference. You can skip the searing process…the bread crumbs…the marinade…the honey in the marinade, etc. Any way you make it…it is EXTRAordinary!

3-4 lbs. Chicken (with or without skin)
1/2 Cup Bread Crumbs
1 Tbs. Each Salt, Pepper, Garlic Powder, Thyme, Cayenne, and Paprika.
Marinade (Optional, but highly recommended!) – See Ingredients and Directions, below.
* Preheat Oven to 425°F.
* Wash chicken and pat dry (thoroughly) with paper towels.
* Add Olive Oil to a Frying Pan over a Medium High Flame.
*Blend bread crumbs & dry ingredients together in a bow. Coat chicken with seasonings.
* Sear Chicken just a few minutes to get a nice crispy coating.
*Transfer Chicken to a Roasting Pan and Cook approximately 50 Minutes.
*Optional – Add marinade during the last 10 minutes of cooking time.
Rachel Maria’s Italian Style Chicken Marinade
Ingredients: 1 Cup of White Wine, 3 Tbs. Olive Oil, 3 Tbs. Soy Sauce, 1 Tbs. Honey, 1 Tbs. Worcestershire Sauce, 3 Bay Leaves, 3 Fresh Sprig of Thyme, 2 Sprigs of Rosemarie, 3-4 Chopped Garlic Cloves
Directions: In a small saucepan, whisk ingredients then simmer for about 10 minutes over a medium-low flame. Drizzle over chicken about 10 minutes before removing from the oven.
