I grew up loving Irish Potatoes. These heavenly confections of delight only came around, once a year. Around St. Patrick’s Day. Recently, I learned that Irish Potatoes originated in Philadelphia! Evidently, some sweet baker came up with the concoction and named them Irish potatoes. Not because they were made with potatoes. But, because they looked like potatoes!

Low Carb Irish Potatoes

As delicious as they may be, Irish Potatoes are very high in sugar! So, this year, I decided to create low carb Irish potatoes, with less sugar. In fact, I opted for organic agave nectar, which has a very low glycemic index. And, unsweetened coconut. Don’t worry, they are still delicious. They are still the perfect sweet treat for St. Patrick’s Day!

Yield: 1.5 Dozen

Keto Irish Potatoes

Ingredients

  • 1/4 cup butter, softened
  • 4 oz cream cheese, softened
  • 1 T vanilla extract
  • 4 T agave nectar
  • 8 oz. unsweetened coconut
  • 3 T Cinnamon

Instructions

  1. Blend softened butter and cream cheese together.
  2. Mix in vanilla, agave, and coconut.
  3. Cover bowl with plastic wrap and refrigerate for at least 1 hour.
  4. Roll mixture into 1" sized balls.
  5. Pour cinnamon in a shallow dish.
  6. Coat each ball with cinnamon and transfer to wax paper.
  7. Refrigerate once again for at least 1 hour.
  8. Best served cold!
