Last night, I attempted to create a gluten free sweet potato gnocchi, but ended up with a sweet potato pancake. As I told Scott, good thing I had a back-up plan. These Asian Grilled Chicken Kabobs came out so delicious, they definitely made it to my future recipe book. I created a marinade for the chicken and left it in the fridge for a few hours. This is a super easy summer recipe that will make you the star of any barbecue!

You can most certainly marinate this chicken overnight, if you prefer.

Feel free to use whatever veggies you like! I’m sure mushrooms would work, splendidly!

I think the trick is all in the marinade! You can use whatever vegetables you want.

I used metal skewers. You can also use wood.

Aren’t these gorgeous!? I felt so good eating something healthy while enjoying the taste. Scott even asked if we can eat these every week, this summer! Hmmm. I figure why not? It was that easy!

Servings: 6-7 Kabobs

Chicken Kabobs

Ingredients

  • 3 Chicken Breasts, cut up in 1.5" cubes
  • 6 garlic cloves, finely chopped
  • 1/2 tsp ginger, finely chopped
  • 1/2 cup olive oil
  • 1/4 cup soy sauce (I use coconut aminos)
  • 1 T Honey (I use agave)
  • 1/2 lime, squeezed juice
  • 2 Zucchini
  • 2 Red onion
  • 3 Bell Peppers (I use red, yellow, and orange peppers for color)

Instructions

  1. Combine garlic, ginger, olive oil, soy sauce (or coconut aminos), honey (or agave), and lime juice to create a marinade for the chicken.
  2. Place chicken cubes in marinade and refrigerate for a minimum of 3 hours.
  3. Cut up vegetables into equal-sized pieces as the chicken.
  4. Thread each skewer with chicken and alternating vegetables.
  5. Grill for approximately 20 minutes or until chicken reaches internal temperature of 165F.
  6. Serve with rice!
