Last night, I attempted to create a gluten free sweet potato gnocchi, but ended up with a sweet potato pancake. As I told Scott, good thing I had a back-up plan. These Asian Grilled Chicken Kabobs came out so delicious, they definitely made it to my future recipe book. I created a marinade for the chicken and left it in the fridge for a few hours. This is a super easy summer recipe that will make you the star of any barbecue!
You can most certainly marinate this chicken overnight, if you prefer.
Feel free to use whatever veggies you like! I’m sure mushrooms would work, splendidly!
I think the trick is all in the marinade! You can use whatever vegetables you want.
I used metal skewers. You can also use wood.
Aren’t these gorgeous!? I felt so good eating something healthy while enjoying the taste. Scott even asked if we can eat these every week, this summer! Hmmm. I figure why not? It was that easy!
