It’s Memorial Day, today. We are having a family bar-b-que at my mom’s. I’ve been assigned (well, I actually volunteered) a home-made pasta salad. I like making pasta salad. It seems like I always have the right ingredients on hand.

Today, I made an Italian Style pasta salad. Some of the ingredients for this one may require a trip to the grocery store. Since my kitchen traditionally stocks Italian delicacies (such as good meats and cheeses I like to put out for company), I just used whatever I could grab.

It came out rather extraordinary! So, I’m sharing it with you. Happy Memorial Day!

Italian Style Pasta Salad

Italian Style Pasta Salad

Yield: 6


  • 1 lb. Medium size Pasta (I think orecchiette, conchiglie, gemelli, or cavatappi work best.)
  • 1 Cup broccoli florets (cut into small pieces)
  • 1 Cup diced Sundried tomatoes (or fresh if preferred)
  • 1 Cup salami (chopped)
  • 1 Cup Asiago Cheese (chopped)
  • 1 Cup green pepper (diced)
  • 1 Cup green olives (diced)
  • 1/2 Cups Pine Nuts
  • 1/2 C. Olive Oil
  • 3/4 C. Balsamic Vinegar
  • Grated Cheese (to season)


  1. Cook pasta to al dente, strain, and place (in a single layer) on a cookie sheet for a few minutes to cool off.
  2. Once cooled, transfer pasta to a large bowl & add in all the ingredients above.
  3. Stir & Serve!

Very easy. Very delicious.
