Bacon & Bok Choy Zoodles


I can’t believe I was a sceptic of Zoodles. I honestly never would have thought that they could taste so delicious. To the point of replacing pasta! If you’re trying to cut down on gluten and/or carbohydrates (either can cause inflammation for some of us), you need to get yourself a spiralizer!
As Scott said yesterday, bacon makes anything taste good. I figured, until I am in love with a new concept, I’ll take all the help I can get. So, if you’re new to Zoodles, this is the perfect recipe for you. It can be served as a side-dish or a main course. You can use any kind of flavored meat, from pancetta to even turkey sausage! You can also use any kind of green vegetable from spinach to broccoli rabe.


Bacon & Bok Choy Zoodles

Yield: 4-5 Servings


  • 5 Zucchini
  • 5 Strips of Bacon, chopped
  • 2 Garlic Cloves, chopped
  • 1 Head Bok Choy, chopped
  • Olive Oil
  • salt & pepper


  1. Prepare your Zoodles with gadget of choice, and set aside. (You may peel the zucchini completely or partially, beforehand.)
  2. Cook chopped bacon (or cut with cooking shears) over a medium-high flame for 3 minutes.
  3. Add a little olive oil and garlic. Saute for a minute or two. (Make sure garlic does NOT burn.)
  4. Add bok choy and stir for another minute or two. It should soften, significantly.
  5. Add Zoodles and stir for an additional 3-5 minutes.
  6. Flavor with salt, pepper, and/or red pepper flakes for some heat.
